Carbon heated and then steam- or chemically treated until its internal structure opens into a vast network of pores, so that a small volume carries an enormous adsorbing surface; dissolved organic molecules stick to that surface as water passes through. Feedstocks include coconut shell, bituminous coal, lignite, peat and wood, and they are not interchangeable - coconut-shell carbon carries roughly 50% more micropores than coal-based carbon, which suits it to the small molecules behind taste and odor, and it comes from an agricultural byproduct rather than a mine. In products the medium shows up three ways: loose granules (GAC) in pitcher and faucet filters, a pressed carbon block, and a porous ceramic candle or shell that handles particulates and microbes while carbon inside handles chemistry.

Is it safe?

The medium is inert and has nothing to give up to water; the black fines in the first glass from a new cartridge are loose carbon dust, not a problem. The honest caution is about capability. EPA lists granular activated carbon for taste- and odor-producing compounds, natural organic matter, volatile and synthetic organic compounds and disinfection byproduct precursors, with removal of some VOCs reaching 99.9%. It does essentially nothing for dissolved minerals and hardness, nitrate, or fluoride, each of which needs a different technology - ion exchange, activated alumina, or reverse osmosis. Metals and cysts are a matter of certification rather than material: a filter reduces lead or Cryptosporidium only if it was built and tested to, which is what NSF/ANSI 53 covers, while NSF/ANSI 42 covers only aesthetic claims. The last caution is time - a saturated cartridge stops adsorbing with no visible sign, and a filter left wet and unused for weeks is a warm, damp, carbon-rich place for bacteria.

With heat

Household carbon filters are cold-water devices. Adsorption is exothermic, so capacity falls as water warms, and hot water can push previously captured compounds back off the carbon and into the glass. Hot water also softens the polyethylene binding a carbon block and the plastic housing around it. Filter cold and heat afterwards, never the reverse.

How to tell it apart

Work out which of the three forms you have: loose granules rattle and settle, a carbon block is a solid pressed cylinder, and a ceramic element is a white or beige porous candle you can physically scrub. Then read the certification properly - "NSF certified" on a box means nothing by itself, because NSF/ANSI 42 is aesthetic claims and NSF/ANSI 53 is health claims, and even within 53 the specific contaminant list varies from filter to filter. Ask a brand three questions: what is the carbon made from, is the block held together with a polymer binder, and what is the cartridge housing. The answers are usually coconut shell or coal, yes, and plastic.

Care & durability

Replace on volume filtered, not on the calendar - a household drinking four litres a day exhausts a cartridge well before the date on the box. Flush a new cartridge before first use to clear fines. If a filter will sit unused for more than a few days, empty it and let it dry rather than leaving it wet. Ceramic elements are the durable part of the system: they scrub back to clean with a pad and last years rather than months.

End of life

The carbon is inert and harmless in a bin, but the cartridge around it is a bonded assembly of carbon, polymer binder, housing, gaskets and mesh, and no curbside program can separate that - it goes in the trash. A handful of filter brands run mail-back programs, which are the only real alternative. Loose GAC from a refillable housing can simply go in the garden or the bin, and ceramic elements end their life as inert ceramic waste.
