Powdered glass fused onto metal by firing, usually between 750 and 850C, so the cooking surface is glass and the strength underneath is steel or cast iron. Lodge describes its own version plainly as cast iron with a smooth porcelain surface bonded to the iron. It shows up as enamelled cast iron Dutch ovens and braisers, speckled camp mugs and basins, stovetop kettles, enamelled steel bakeware and roasting pans, and porcelain-coated grill grates. Because the glass layer is fused rather than sprayed and cured, it is a very different thing from the sol-gel coatings sold as "ceramic nonstick".

Is it safe?

The food-contact surface is glass, so it is inert, non-porous and unreactive with acid, salt and long simmering - the practical reason enamelled cast iron is the default for tomato sauce and braises where bare iron would react. The open question is the same one that applies to ceramic glazes: coloured enamel frits have historically used lead and cadmium compounds for gloss and for bright reds, oranges and yellows, and vintage or unbranded enamelware carries the same uncertainty as vintage pottery. There is a gap in the published rules here worth knowing: FDA's leach-test action levels are written for ceramic pottery, not enamelled metal, so there is no equally specific public number to point a brand at. That makes the maker's own testing the whole answer - ask for lead and cadmium leach results and for a California Proposition 65 tableware statement, and treat a brand that cannot produce either as unverified rather than unsafe. With heat

The enamel was fired at 750-850C, so nothing a domestic oven does touches it chemically. The limits are mechanical and come from the assembly rather than the glass: Lodge caps its enamelled cast iron at 500F, largely because of knobs and handles. Enamel and metal expand at different rates, so thermal shock is the failure to avoid - no cold water into a hot pot, no empty preheating on high, no hot pot straight onto a wet stone counter. Vitreous enamel also tends to crack when the substrate underneath is stressed or bent, which is why thin enamelled steel is more fragile in the oven than heavy cast iron.

How to tell it apart

A glass-smooth coloured surface over metal that a magnet sticks to, and a chip that reveals bare grey metal rather than another layer of coating. Weight separates the two common forms: heavy and thick is enamelled cast iron, light and thin with a speckled finish is enamelled steel. The lookalike to rule out is "ceramic coated" cookware, which is a sprayed sol-gel layer over aluminium and has its own page - if the pan is light, aluminium-bodied, and marketed as nonstick, it is not porcelain enamel. Grill grates sold as "porcelain-coated" are usually real enamel over steel or cast iron. If a spec sheet only says "enamel", ask whether the substrate is cast iron or steel and whether the interior enamel is the same formulation as the coloured exterior.

Care & durability

Chipping is the realistic end of life. Use wood, silicone or nylon utensils, do not stack pieces without a protector between them, and skip abrasive scourers; Lodge calls its enamelled cast iron technically dishwasher safe but prefers hand washing to preserve the finish. An exterior chip is cosmetic, but an interior chip exposes iron that will rust and stain and can shed glass flakes, so retire a chipped interior from cooking. Light interior staining from polymerised oil is normal and comes off with a mild abrasive cleaner. Barring a chip or a drop, a good enamelled cast iron pot is a decades-long purchase.

End of life

A glass-on-metal composite falls between the two recycling streams: it is rejected by container-glass recycling and is not a clean metal for curbside collection either, so check whether a local scrap metal yard takes cast iron before assuming. Otherwise it lands in the trash and is inert there. Chipped pieces stay useful for non-food duty, and intact ones resell readily, which is the more realistic second life.
