A sprayed-on silica coating, not ceramic. A liquid mixture of silica, metal oxides and binders is applied to a metal pan body - almost always aluminium - and cured at roughly 400 to 800F, a process called sol-gel because the solution sets into a gel that heat converts into a thin glass-like film. Real ceramic is fired clay at well above 2,000F, which is why the American Ceramic Society's review of the category calls these coatings quasi-ceramic rather than ceramic. The release itself comes from siloxanes in the formulation, according to coatings manufacturer ILAG, not from silica hardness. This is the finish on GreenPan, Caraway, Our Place and most cookware sold as PTFE-free.

Is it safe?

There is no PTFE and no fluoropolymer here, so the PFAS objection that governs our treatment of nonstick does not apply to the coating chemistry, and there is no conventional plastic resin in the food path either. That is a real distinction and we do not want to blur it. What it is not is an inert surface with nothing to disclose. Formulations are proprietary and typically include metal oxides and organic binders: the American Ceramic Society's 2025 review reports titanium dioxide nanoparticles identified in GreenPan, Always Pan and Caraway coatings with the potential to migrate into food, and Guardian reporting the same year, working from independent testing and internal documents, named titanium dioxide, siloxanes, lead and mercury among substances turning up in the category. Washington state has begun requiring ingredient disclosure for nonstick cookware, which is the clearest signal that the "nontoxic" marketing has been running ahead of the published evidence. Our honest position: better than PTFE on the fluorochemical question, worse than a bare uncoated surface on the question of knowing what you are cooking on. A PFAS-free claim also usually covers the coating, not necessarily the whole pan.

With heat

Heat is what kills these coatings, and that is the opposite of the intuition most buyers bring from PTFE. PPG, which makes both kinds, states that for sol-gel coatings thermal stress and chemicals rather than abrasion and scratches are the biggest cause of failure. There is no polymer-fume-fever mechanism as there is with PTFE above 260C, but hard dry heat degrades the film and, per the American Ceramic Society review, degradation can release compounds whose identity the maker has not published. Cook on low to medium, never preheat empty on high, and treat a pan that has started sticking as a pan that has already been overheated.

How to tell it apart

Look at what is under the coating. A light aluminium body with a slick coloured interior - usually white, cream or grey speckle - marketed as nonstick is a sol-gel coating; a magnet will typically only grab the induction disc bonded to the base, not the pan walls. Fired ceramic is a solid clay object with no metal in it, and porcelain enamel is glass fused to a magnetic steel or cast iron body that shows bare metal at a chip. Both have their own pages. The marketing language is the other tell: "ceramic coated", "ceramic nonstick" and "PTFE-free" all describe this material, while a genuinely all-ceramic pan will say so. Ask a brand three questions: what is the coating's trade name, what is the pan body made of, and does the PFAS-free claim cover the whole pan or only the cooking surface.

Care & durability

ILAG describes these coatings as very hard and scratch resistant but very brittle, which matches how they fail in kitchens: not a scratched-through patch like PTFE, but a gradual loss of release across the whole surface. Published lifespans are all over the place and none of them is rigorous - the Cookware and Bakeware Alliance figure quoted by America's Test Kitchen is five to seven years for a quality nonstick coating, ATK adds that ceramic pans typically wear faster than PTFE, and the American Ceramic Society review says these coatings can decompose sometimes within months while claiming up to ten years with careful use. Consumer Reports' own durability rig, which rubs a heated pan with steel wool for up to 2,000 strokes and then scores egg release, found most current pans of both types clustered in the middle. Plan on release fading well before the pan wears out physically, and use low heat, oil, soft utensils and hand washing to push that out.

End of life

A coated aluminium pan is not recyclable through curbside collection, and the coating is a contaminant for scrap aluminium, so most of these pans are landfilled. Some cookware brands run take-back programs; check before assuming. Because the coating fails long before the metal does, the real footprint of this category is the replacement cycle rather than the disposal of any one pan, which is the strongest practical argument for cast iron, carbon steel or stainless if you can cook on them.
