The verdict: Minimal plastic contact

Ascaso markets the Steel line on a 100% food-safe AISI 316 stainless-steel water circuit, and the heated brew path is largely stainless-lined thermoblock plus silicone tubing feeding a stainless/aluminum group - much cleaner than a typical pump machine. But the "no plastic in the water path" claim is not literally true on volumetric models: Ascaso's own spec sheet lists a glass-filled PBT (Arnite) flowmeter body in the circuit, and the cold-water reservoir is NSF/FDA-approved polycarbonate. So it is the best electric option here for avoiding plastic, but it is minimal-contact, not plastic-free.
