Misen Carbon Nonstick Frying Pan
A "nonstick" pan with nothing on it - the release comes from nitriding the steel itself, so there is no coating in the food path to scratch, flake, or wear out.
The verdict: Plastic-free
Nothing plastic and nothing silicone: the pan is three plies of steel with an aluminum core, and the food only ever touches bare metal. What makes it unusual is the "nonstick" claim, because there is no nonstick layer. The cooking surface is nitrided - the finished steel is held in a nitrogen-rich furnace until nitrogen diffuses into the metal and hardens the surface itself. That is a change to the steel, not something applied on top of it, so unlike PTFE and unlike the sol-gel "ceramic" pans there is no coating that can chip, scratch off, or degrade with heat. It is the same category of answer as Our Place's micro-textured titanium: a bare-metal surface engineered to release food, rather than a coated one.
The one caveat is honesty about what "nonstick" buys you here - the surface is slicker than raw carbon steel but not as slick as Teflon, and Misen still recommends building a patina on it. That is a performance question, not a materials one; the rating turns on the fact that there is nothing in the food path but steel.

A 3-ply frying pan - nitrided carbon steel on both faces around an aluminum core - sold in 8, 10, and 12 inch sizes, individually and in sets, plus a "Deeper" variant with more sidewall in the same footprint and an 11 inch square griddle. The aluminum core is the reason it is lighter and more responsive than a solid carbon steel or cast iron pan of the same size; the 10 inch runs about 1.7 lb at 2.5 mm thick through the base. It is induction compatible, safe with metal utensils, and oven and grill safe to 1100F. Unlike traditional carbon steel it arrives ready to cook on without a stripping-and-seasoning ritual, and it is far more rust-forgiving - Misen's pitch is a pan you can leave in the sink. Hand wash only. An optional tempered glass lid is sold separately for each size.
