The same iron-and-carbon chemistry as cast iron, below the 2% carbon line that defines cast iron - a de Buyer MINERAL B pan, for instance, is specified as 99% iron and 1% carbon. That puts it in steel territory, which means it can be rolled into sheet and pressed rather than poured, so pans come out thin, smooth and light: 2.5 mm on the smaller de Buyer sizes and 3 mm on the larger ones, giving 2.2 lb at 8 inches rising to 7.8 lb at 14. Fry pans, woks, crepe pans and many knives. It takes and holds the same polymerized-oil seasoning described under Cast Iron, so read that page for what the black surface actually is and why it is not a manufactured nonstick coating.

Is it safe?

Chemically the same story as bare iron - it puts iron into food, more so with acid and time, and the numbers and the hemochromatosis caveat live on the Cast Iron page. The one thing genuinely specific to carbon steel is what it ships with. New pans arrive under a factory anti-rust layer that must come off before first use, and it is not the same substance from every maker: de Buyer coats MINERAL B pans in beeswax, while Matfer Bourgeat uses a high-viscosity plant-based vegetable oil. Neither is a lacquer, despite the common claim - do not scrub a pan raw on the assumption it carries a solvent finish. Matfer's own removal test is useful: wash with soap and a brush until your finger runs smoothly and stops squeaking against remaining patches of coating.

With heat

Thin-walled steel with far less thermal mass than cast iron, so it heats and drops fast and responds to a burner adjustment in seconds - the trade is that it does not hold heat when cold food goes in. The seasoning is built the same way as on cast iron, at or above the oil's smoke point, and de Buyer's stovetop method is explicitly heat the oil about ten minutes until it smokes. Watch the handle rather than the metal: de Buyer rates the epoxy-set handle on MINERAL B for oven flash use only, a maximum of 400 F for under ten minutes, which is a lower ceiling than the pan itself has and the sort of detail that decides whether a pan is really oven-safe.

How to tell it apart

A carbon steel pan is pressed from sheet, so it has a uniform wall thickness, a visibly riveted or welded-on handle and a smooth machined- looking cooking surface - cast iron is poured in one piece with a thicker, slightly pebbled surface and a handle that is part of the casting. Both are magnetic and both go black with use. New, unseasoned carbon steel is bare silver-grey, not black, which is the clearest tell in a shop. If a pan is described as black steel or blue steel, that is carbon steel with a mill finish, not a coating. Ask a brand two things: the carbon content or gauge, and what the shipping coating is.

Care & durability

Hand wash, dry on the heat, oil thinly. de Buyer is blunt that carbon steel is not dishwasher safe and that harsh detergents should be avoided, and recommends seasoning two or three times before first use. Acid strips seasoning faster here than on a thick cast-iron pan simply because the layer is younger and thinner on a new pan, so keep tomato and citrus short until the surface is established. Rust is a scour-and-reseason job, not a write-off. Thin steel can warp on a burner hotter than the pan, which is the failure mode cast iron does not share.

End of life

Ordinary steel scrap with real value, accepted anywhere metal is. In practice a carbon steel pan rarely gets there - a neglected one is restorable indefinitely, and there is no coating to wear out and no reason to replace it.
