The verdict: Minimal plastic contact
Both ends of this grinder's path are metal, and that is genuinely rare. Beans go into an aluminium funnel, and the grounds land in a double-walled stainless cup that a Niche patent specifies as 1.4301 - that is 304 - with a bright-polished interior. Almost nothing else near this price gets both ends right.
The plastic is in the middle. The exit spout the grounds actually travel through is polymer, as are the lid and the grind-setting ring at the burrs. Niche has never published any of this. It is disclosed only in patent applications filed by Nicholson Design Consultants, the design firm of Niche's founder, which state that "the spout, the setting ring, the intermediate member and the bearing support plate will be of polymeric material" while "the body portions, the base, the grounds expulsion member and the bean funnel will be of light alloy."
Two honesty notes on how hard that finding is. The clearest wording comes from the earliest filing and is the inventor's intended embodiment - "will be", not a production bill of materials - and the later granted patents soften it to a permissive "may be formed from a polymeric material or a metallic material." No teardown has ever named the production spout. But no document anywhere says it is metal, and the whole patent family consistently contemplates a polymer one.
Worth correcting directly, because it is all over search results: the claim that the Niche ships a plastic catch cup is wrong. It traces to two review sites that also get the burr type and body material wrong, and it is contradicted by a hands-on trade review, by owners, and by Niche's own patent naming the steel grade. Owners who bought an aftermarket cup were replacing an early ridged stainless cup with a smoother stainless one, not escaping plastic.
A nice detail from the same filings: Niche's fix for the static that plagues plastic grind paths was not a coating. It was wood. The patents report that making the stand and feet from wood made the electrostatic grounds hang-up "disappear."

A single-dose conical grinder built around a straight-through path: you weigh beans into the funnel, they drop through 63mm burrs, and essentially all of them come straight out into the cup with no bulk hopper and no dose to purge.
