Copper
Soft reddish metal, the best heat conductor in ordinary kitchen use. In products it appears as heating elements and water tubing inside coffee makers and boilers, as moka pot and kettle bodies, as the conductive layer or disc inside clad cookware, as copper mesh scrubbers, and as the wetted path in plumbing. Food-contact copper cookware is almost always lined with tin or stainless steel rather than left bare, for the reason in the safety notes below. Alloyed with zinc it becomes brass, which we track separately because its story is about lead, not copper.

Is it safe?
Copper is an essential trace nutrient and an irritant in excess, and the line between those is drawn by acidity. The FDA Food Code is blunt about it: copper and copper alloys such as brass may not be used in contact with food below pH 6 - vinegar, fruit juice, wine - nor in a fitting between a backflow preventer and a carbonator, with a narrow exception for pre-fermentation beer brewing. EPA sets a copper action level of 1.3 mg/L in drinking water and attributes gastrointestinal distress to short-term excess and liver or kidney damage to long-term excess. That is the whole basis for lining copper pans, and it is why an unlined copper mug is a poor container for a citrus cocktail and a perfectly fine one for water. Brief contact with near-neutral hot water - a heating element, a copper kettle, a boiler line - is a different case entirely: short dwell, no acid, and no evidence of a problem. Copper is not a plastic and sheds nothing microplastic.
With heat
Heat is what copper is for. It responds faster and more evenly than aluminum or steel, which is why serious sauce and sugar work is still done in it. The metal melts around 1085C, so temperature is a structural non-issue; the binding limit on a tin-lined copper pan is the tin, which melts near 232C, so an empty tinned pan left on a hot burner can lose its lining. Stainless-lined copper has no such ceiling.
How to tell it apart
Fresh copper is salmon-pink to orange, ages to dull brown, and eventually to a green-blue patina; it is non-magnetic and heavy for its size. The important test is solid versus plated: a magnet sticks firmly to copper-plated steel and not at all to solid copper, which sorts out most copper-colored scrubbers, pans, and mugs. Copper is reddish where brass is yellow. "Copper-bottom" and "copper-core" cookware means a thin disc or layer buried in a stainless sandwich, so the food surface is stainless, not copper. If a brand sells copper cookware, ask what the interior lining is - tin, stainless, or nothing - because unlined means the pH 6 rule above applies to you.
Care & durability
Copper tarnishes constantly and that is cosmetic, not a fault; the salt-and- lemon trick that restores the shine works because acid dissolves the surface, which is the same reason acid does not belong inside an unlined pan. Rinse any polish off thoroughly. The metal is soft and dents easily. Tin linings wear thin over years and can be professionally re-tinned; stainless linings simply outlast the pan.
End of life
Copper has among the highest scrap values of any common metal, so it is genuinely recycled - but rarely through curbside bins. A scrap yard will pay for it, and copper cookware is usually resold or re-lined rather than discarded.
