Anodized Aluminum
Aluminum whose own surface has been electrochemically converted into a thick, hard layer of aluminum oxide. The distinction that matters on this site is that anodizing is not an applied coating. The Aluminum Anodizers Council is explicit that the oxide is integrated with the aluminum underneath rather than laid on it like paint or plating, and so cannot chip or peel; roughly half the layer grows down into the metal while half builds outward. It therefore has nothing in common with the sol-gel and fluoropolymer coatings we track separately, which sit on top of a substrate and can flake off it. Anodizing turns up on cookware bodies, grinder burr chambers and catch cups, camp cookware, razor handles, and bottle exteriors.

Is it safe?
The sealed oxide layer is chemically stable and largely removes the acidic- and salty-food reactivity that is the genuine concern with bare aluminum - see the aluminum page for that story. The trap is naming, not chemistry: most pans sold as "hard-anodized" are anodized and then given a PTFE nonstick topcoat, so the surface your food touches is fluoropolymer and the anodizing describes the body underneath. Anodizing tells you about the base metal, not the cooking surface. Genuinely uncoated hard-anodized cookware exists but is uncommon, and it behaves like a dark, hard, non-stick-free pan. Dyed anodizing holds color inside the pores of the oxide, which is then sealed - the color is not a paint layer sitting on the surface.
With heat
The oxide is stable far past any cooking temperature; the practical ceiling is the aluminum underneath, and on coated pans it is the coating, not the anodizing. Dishwashers are the real enemy: hot detergent dulls and darkens the finish, which is why anodized cookware, grinder parts, and catch cups are almost universally labeled hand-wash only.
How to tell it apart
Anodized aluminum reads as uniform matte or satin metal, dark grey through black or dyed a saturated color, with the finish running right to the edges and into every recess. A coating instead has a visible termination line, sits slightly proud of the metal, and can be picked back to bright bare aluminum with a knife point; anodizing wears thin at high-abrasion spots but leaves no flake. The everyday lookalike is a black PTFE-coated pan advertised as "hard-anodized". Ask a brand two questions: is the interior anodized only or anodized and then coated, and is it Type II or Type III. Per MIL-A-8625, Type II runs about 0.0001 to 0.0005 inch thick; Type III hardcoat is typically 0.001 to 0.002 inch and is what "hard-anodized" is supposed to mean.
Care & durability
Hand wash, and keep it away from dishwasher detergent, oven cleaner, and strong alkaline degreasers. The layer is harder than the metal under it and resists scratching well, but it does thin out at contact points - the throat of a grinder burr chamber, the rim of a pan - eventually exposing bare aluminum, which then behaves like bare aluminum. Treated gently it outlasts any coating.
End of life
It is aluminum, and it goes back into the aluminum stream: the oxide is a few microns of the metal's own oxide, not a foreign layer that has to be separated out.
